Sauerkraut Salad

I like to make this salad the day before serving or in the morning so that it is ready for dinner. With time, the flavors improve. It is a perfect summertime dish and complements barbecued sausage.

Ingredients
  

  • 16 oz sauerkraut rinsed
  • 1 cup onion chopped
  • 1 cup bell pepper chopped
  • 3 oz pimento chopped
  • 1/2 tsp garlic powder
  • 1/4 cup oil
  • 1/2 to 3/4 cup Stevia
  • 1/4 cup salad oil
  • 1/2 cup vinegar

Instructions
 

  • Combine sauerkraut, vegetables, and garlic powder.
  • In another bowl, mix Stevia and vinegar.
  • Pour liquid over the sauerkraut mixture.
  • Allow to marinade in refrigerator for a minimum of 2 hours.
