Sauerkraut Salad
I like to make this salad the day before serving or in the morning so that it is ready for dinner. With time, the flavors improve. It is a perfect summertime dish and complements barbecued sausage.
Ingredients
- 16 oz sauerkraut rinsed
- 1 cup onion chopped
- 1 cup bell pepper chopped
- 3 oz pimento chopped
- 1/2 tsp garlic powder
- 1/4 cup oil
- 1/2 to 3/4 cup Stevia
- 1/4 cup salad oil
- 1/2 cup vinegar
Instructions
- Combine sauerkraut, vegetables, and garlic powder.
- In another bowl, mix Stevia and vinegar.
- Pour liquid over the sauerkraut mixture.
- Allow to marinade in refrigerator for a minimum of 2 hours.
