These date balls are a quick and easy way to get healthy calories and energy into your body. I make these before a long work week, and I always pack a couple for my workouts. They are sweet, tasty, and packed with nutrients that will keep your energy levels up and have you feeling ready to take on the world!

Ingredients
  

  • 12 oz of dates of your choice I used honey dates
  • 1 cup unsweetened shredded coconut
  • 4 tbsp of chia seeds
  • 8 oz nuts of your choice walnut, pecan, almond
  • Honey to taste

Instructions
 

  • Remove pits from the dates and soak the dates in warm water for 5 minutes to soften up the fruit. This will make it easier to blend and form the balls.
  • Add soaked dates to the food processor along with the nuts, chia seeds, and a ½ cup of shredded coconut. Add honey to sweeten the mixture to taste. Blend until the mixture sticks together into a dough-like consistency, but is not too chunky. If the mixture is not sticking and is too chunky, add small amounts of water until the mixture is at the desired consistency.
  • Place the rest of the shredded coconut in a bowl. Take a tablespoon of the blended mixture and roll it into balls, coating them in the remaining shredded coconut and placing them on a sheet of parchment paper.
  • Place in the fridge to solidify enough to stack them in an airtight container without sticking (about an hour). Once the date balls have been moved to an airtight container, keep them in the fridge to keep them fresh for up to 2 weeks.
