Ginger Soy Marinade for Grilled Fish
This is a great marinade and easy to put together. It is used best when grilling fish steaks, such as swordfish, tuna, salmon, or halibut; or thicker cut fish fillets (1inch or more). It imparts a milder, slightly sweet flavor. This marinade will service about 2 lbs. of fish steak or thick fillet. When grilling salmon my preference is a skin-on fresh salmon filet.
Ingredients
- 4 freshly crushed/chopped garlic cloves
- 3 tablespoons of soy sauce regular or low salt
- 1-2 tablespoons rice wine vinegar dry sherry can be substituted
- 3 tablespoons of good quality oil such as extra virgin olive oil, grapeseed, sunflower or vegetable.
- 2 tablespoons sugar
- 2 tablespoons minced fresh ginger
- 1 tablespoon lemon juice
Instructions
- Mix all ingredients well. (Oil and vinegar always want to separate)
- Place fish single layer in a glass or ceramic dish. Pour marinade over the fish and cover. Refrigerate and marinate for about 1-2 hours.
Notes
When grilling it is best to research what kind of fish you are grilling for best heat and time, as it may differ. With my skin-on salmon fillet the fish was placed skin side down on a medium-low preheated (no need to oil the grates) for about 8-9 minutes. Close the cover and check every 3-4 minutes. You can brush fish with the remaining marinade while grilling. Test for doneness by gently press your thumb on the fish. It should be firm (but not hard) to touch**. Or you could try to flake it ever so gently with a fork. When the fish is ready to turn it will release from grates easily using a spatula. Turn fish over and grill on high for another 2-3 minutes to get those nice, seared grill marks on top. Discard unused marinade.
**If using a cooking thermometer, the safety temp for fish is 140-145 degrees. It is generally best to remove before it reaches this temp though and let it ‘rest’ for 1-2 minutes before serving. While resting, fish will continue to cook ever so slightly and firm up for nicer service.
As with all cooking, practice makes perfect, and you may decide you want to grill fish differently and that’s just fine!
