Banana Nut Bread

This banana bread is always a hit!  It is moist, flavorful, and easy to put together!
Prep Time 20 minutes
Cook Time 1 hour

Ingredients
  

  • 1 3/4 cups all-purpose flour
  • 1 1/4 teaspoons baking powder
  • 3/4 teaspoon salt best is sea salt
  • 1/2 teaspoon baking soda
  • 2/3 cup sugar
  • 1/3 cup shortening you can use butter, margarine or Crisco
  • 2 large eggs preferably at room temp
  • 2 tablespoons of milk
  • 1 cup mashed ripe bananas usually about 3 medium bananas
  • 1/4 cup or more depending on preference chopped pecans or walnuts

Method
 

  1. Preheat the oven to 350° (did you know it is best to have the oven heated about 20-30 minutes before baking?)
  2. Sift together the flour, baking powder, salt and baking soda and set aside.
  3. In mixing bowl, cream the sugar and shortening until light and fluffy (about 5 minutes at medium speed)
  4. Add eggs to the creamed mixture one at a time, then add milk.
  5. Add flour mixture and mashed bananas alternately to creamed mixture and beat until smooth after each addition.
  6. Fold in the nuts (you don’t have to use the nuts, but its sooooo good with nuts) .
  7. Turn into lightly greased 8 x 4 x 2“loaf pan.
  8. Bake in middle rack at 350º about 60 to 65 minutes, until a wooden toothpick or knife inserted near the center comes out.
  9. Cool for 10 minutes then remove from the pan and cool on a wire rack. Eat with or wrap and store overnight.
